I wish people would only eat fish on a rare occasion, and
branch out to eat more plant-based sushi. It’s what I am trying to eat more of these days and what I’m finding is pretty cool. I’m trying vegetarian restaurants like Cha-ya, which serves delicious tempura yam rolls, or finding eco-friendly sushi recipes like spicy tempeh rolls, in place of spider rolls.
Making sushi is fun if you get a few friends together and get well-organized. It’s important to rinse rice beforehand, moisten with seasoned rice vinegar once cooked, and keep tightly covered until ready to roll. You can use white or brown rice. We also experimented with black rice and it turned out great.

For fillings, pick from steamed asparagus, shiitake mushrooms, raw avocado, cucumber, bell peppers, baked tofu, fried tempeh, and even mango.
I hope this provides some inspiration for skipping out on endangered fish and gettin’ your sushi groove on!
